For vegetarians and vegans alike the restaurant with a new dining concept in Ibiza, the new vegan restaurant Wild Beets, is the only one of its kind on the island and as Vogue USA says

Loved by  some of the world’s most famous DJ’s, musicians, models and sports stars Wild Beets is a café by day but transforms into a restaurant by night with a offering a whole new level of creative and visually stunning vegan cooking. Everything is 100% organic and everything is made on the premises.

Wild Beets is located in the pretty little village of Santa Gertrudis in the heart of Ibiza, but as the island is only 45km long and 25km wide it’s not far from anywhere.

New for 2019 this vegan restaurant is launching The Botanical Adventure  their new game-changing dining concept. Diners will be served imaginative food and dinner will be a botanical experience in the true meaning of the word.

The new menu to be served in the evenings only, will be cooked up in the Wild Beets laboratory by owner and culinary inventor Cliff Grubin and head chef Gaston Alita. They will be joined by chef Alex Mark who has worked all over the world with prestigious chefs including Gordon Ramsay.

Try the Edible Forest (Mushroom pain perdu), Skip in the Park (Zucchini soup), or the Rising Sun(Tomato tartare), followed by a Gentle Squeeze (compressed seasonal fruit salad, cucumber & eucalyptus sorbet).

 

 

Fresh local spirulina and other wild botanicals are included in many of the dishes. There will also be mouth-watering organic botanical cocktails and mocktails created with Wild Beets own bitters and shrubs (vinegars).

The philosophy behind Wild Beets is serving nutrient dense meals that taste great and look gorgeous.  By combining a healthy dose of science, nutrition and a love of good food Wild Beets successfully bring a healthy awareness to the table with its plant-based, vegan, cruelty-free, gluten-free, fresh, organic dishes.

Wild Beets is the brainchild of native New Yorker Cliff Grubin. Originally owner/designer of super cool New York jewellery firm Black Hole Productions (Madonna was a fan). Cliff spent a lifetime travelling the world before being drawn to Ibiza over fifteen years ago, where he started Ibiza’s first juice bar, the original and legendary, ‘Sejuiced’, on iconic Benirras Beach, famous for Sunday drumming. He then went on to create ‘iPurify’, a line of cold-pressed juices and well being-focused juice cleanses, before launching Wild Beets in 2014.

Also new for 2019, Wild Beets will be going on the road. Cliff’s daughter Nierika will be taking the Sejuiced (mobile juice bar) van to festivals across Europe includingTransition Festival in Spain, Pete the Monkey in France and Meadows in the Mountains in Bulgaria.
